Blueberry & Oat Muffins

This recipe is packed with B vitamins, fibre, protein and other nutrients plus they are delicious and easy to make 🤌🏻

150g melted butter

1/2 cup plain Greek Yoghurt

2 eggs

1 cup milk (add a squeeze of lemon juice into it to help turn it into buttermilk)

1/2 cup caster sugar (replace with honey here if like)

2 tsp baking powder

1 cup frozen blueberries

2 cups flour

1/2 cup rolled oats

Preheat oven to 180 Degrees on bake.

Whisk together all the wet ingredients in a bowl.

Add in the sugar and dry ingredients and gently fold together. Carefully fold through the frozen blueberries.

Place into a lined muffin tin. Bake for around 30 -35 minutes or until a skewer comes out clean.

Walaa - enjoy. Replace with other ingredients if gluten/dairy or ‘other’ free. Ask me for replacement options if you need help.
